CARROT SALAD GRATED & PINEAPPLE
I never thought that I would love a raw carrot salad. I am surprised by how much I like this sweet carrot salad and it goes so well with any BBQ. The salad is crunchy and juicy packed with a lot of flavors and the color is divine.
What is also nice about this salad is that I have kept it for a couple of days in the fridge and it just gets better.
Carrot salad is super easy to make, even the children can lend a hand in making it. Be careful it can get addictive.
If you like having picnics, this will also do. Keep it fresh and cold in a jar, take it on a picnic and enjoy it.
By adding some small pieces of diced smoked chicken, you invent a meal on its own. You can spice it up any way you like, even add paprika or cumin, what about cinnamon? Go for gold and do your thing.
The leftovers are always good the next day.

INGREDIENTS
1 kg Carrots, peeled and grated 1 tinned can of Pineapple pieces with the liquid 3 tablespoons salted Peanuts 3 tablespoons dried Cranberries 4 tablespoons Sugar Salt and Pepper to taste chopped Chives for garnish
ASSEMBLING
This is so easy. Peel the Carrots and then it is time to grate. As you can see in the picture, I used the chunky big grating option. Just love the crunchy texture. Remember when adding the tinned pineapple to add the juices as well . Take all the ingredients except the chives and mix it in a mixing bowl. Garnish with the chives before serving.
I know there is a lot of juices, discard if not wanted.
