Crust
Ingredients:
- 200g Tennis Biscuits
- 1/2 tsp of Cinnamon, Fine
- 1/4 Cup of Designated Coconut
- 1/4 Cup of Melted Butter
Method:
- In a food processor, crumb the Biscuits and Coconut
- Add the Cinnamon and Butter
- Press in a tart bin as base for the tart
- Set the oven to 180 degrees Celsius and bake the base for 4 min
Filling
Ingredients:

- 2 Large Eggs Yolks
- 1/2 Cup of Lemon Juice
- 375ml Condensed Milk
- 1 Tsp Lemon Zest
Method:
- Mix the ingredients well
- Fill the Biscuit Base
- Bake for 5 min
Topping
Ingredients:
- 2 Large Egg Whites
- 1/2 Cup of Designated Coconut
- 1/2 Tsp of Creme Tartar
- 1/2 Cup of Icing Sugar
Method:

- Beat the Egg Whites to a stiff peak, then add the Creme Tartar
- Add the Icing Sugar and keep on whisking
- Fold in the Coconut and cover the tart
- Bake for 7 minutes and set aside to cool down completely
