CARROT SALAD GRATED & PINEAPPLE
I never thought that I would love a raw carrot salad. I am surprised by how much I like this sweet carrot salad and it goes so well with any BBQ. The salad is crunchy and juicy packed with a lot of flavors and the color is divine. What is also nice about this salad is that I have kept it for a couple of days in the fridge and it just gets better. Carrot salad is super easy to make, even the children can lend a hand in making it. Be careful it can get addictive. If you like having picnics, this will also do. Keep it fresh and…

Hi there! I’m Enzelle – a foodie, traveler, wife to Leon, mother of Leonelle and Lerika, animal lover, writer, and storyteller passionate about life’s little adventures. Hoi An, Vietnam
Hoi An is a UNESCO World Heritage site. Standing out for me was the covered “Japanese Bridge” that dates back to the 16th and 17the century. Firstly, this town is one of the most beautiful towns and the streets are so charming. Secondly, the vibrant atmosphere helps in preserving this magical old town. Some people might name it the “Venice” of Vietnam with all the canals from the Thu Ban River. I do agree that Hoi An is very touristy, there is an abundance of Hotels, restaurants, tour operators, and souvenir shops. Every shop is beautiful and perfectly displayed. Shopping in Hoi An is a must and the experience for…
Golden Bridge
To visit this beautiful 150-meter long pedestrian Golden Bridge Vietnam we had to visit the Ba Na Hills resort/Sunworld. It is situated near De Nang. The two massive stony hands are connected by cable-car and is the best way to get there and to provide a scenic overlook and tourist attractions. Ba Na Hills resort was one of the most mind blowing experiences in Vietnam. It was such a pitty we were only there for one day. I will deffinately go back and stay for more than 2 nights. This is a place for children and adults with child still in them. Lets save this for another story. Back to…
Beng Mealea is also a mysterious temple
This Spectacular Angkor Wat period temple is a sight to behold and is located 77km from Siem Reap and called Beng Mealea Temple, Cambodia. I must say that you could see the disappointment on my face🤔 when noticing the lack of tourists. To me, this is one of the most precious, most beautiful ruined temples ever. It was built as a Hindu temple and what I have noticed was some Buddhist motifs carved here and there on the walls. The cold sandstone ruin is largely unrestored and nature has run riot. The trees and roots are taking over and this gives you the impression of an ideal spot for a…
