RUSTIC ROASTED CURRIED BUTTERNUT SOUP RECIPE

This scrumptious Curried Butternut Soup Recipe is all about chewing and spicing up your soul. The ingredients are simple and taste amazing all together. This quick and easy recipe comes together in one pot. The texture is not smooth and rich in flavor.

Serve it plain and simple/Enzelle

Ingredients

  • 4 medium Butternuts  
  • Salt and Pepper to taste  
  • 2 tablespoons Olive oil 
  • 2 medium Onions, diced 
  • 3 tablespoons Butter
  • 2 tablespoons Curry Powder
  • 1.5 liter Chicken Stock
  • 2 cups Coconut Cream
  • Crème Fraîche and fresh Coriander for extra taste

 

Instructions

Peel the Butternut, Halve the Butternut then bake the Butternut.

  • First place the halved Butternut on a baking tray and season with Olive Oil, Salt, and also Pepper. Roast for 50 minutes on a roasting pan at 180°C.  Do not cover.
  • Fry the Onion in Butter till soft.  I would say about 5 – 7 minutes.  Add the Curry Powder, stir and then add the Chicken Stock and bring to a boil.  Keep on boiling for 10 minutes.
  • As soon as the Butternut is soft and cooked you can finally mash it.  I mash it by hand in the roasting pan.  Add to the Onion and Chicken Stock then stir with a wooden spoon.
  • Add the Coconut Cream and bring to a boil.
  • You can also garnish the Butternut Soup with a dollop of Crème Fraîche and fresh Coriander leaves.

Tips if you prefer it creamy. Yes, you can blend this Butternut Soup in a creamy delicious soup. Transfer your soup to your blender in batches. Also, please do not fill a blender more than halfway, as a result, it will spillover. Bend the soup before adding the Coconut Cream and enjoy!!!! Just as yummy
